Lemon Berry Bars

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons salted butter, melted
  • 1/4 cup sugar
  • zest of 1 lemon

For the filling:

  • 2 large egg yolks
  • 14 ounce can sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 2 teaspoons lemon zest
  • 4 ounces fresh raspberries
  • 4 ounces fresh blueberries

Preheat oven to 350°F. Lightly spray an 8”x8” baking dish with cooking spray. In a medium bowl, mix together ingredients for the crust until well combined. Press graham cracker crust into the pan in an even layer. Bake for 10 minutes until golden brown and fragrant.

In a large bowl, stir together egg yolks, sweetened condensed milk, lemon juice, and lemon zest for the filling. Gently fold in blueberries and raspberries. Pour filling over the crust. Bake 15 minutes until set. Chill 1 hour in the refrigerator before slicing and serving.

If you don’t love blueberries or raspberries, you can simply use one berry in the lemon bars, or substitute blackberries!
